Is there a set default limit for Journals and if so, can I choose how many Journals a user can post?

No, there's not a way to limit someone's Journal entries. As a matter of fact, we are leaning towards completely removing it from RavenNuke and replacing it with a blogging system.

Will current Journals be converted over to the blogging system, or will alll journals be lost? Should I not use journals and wait for the blogging system?

It hasn't been determined yet. If it is removed, either the journal will be made an add on module or converted. The info will not be lost.
